The harvest is done manually, making a meticulous selection of bunches in the field. Once in the cellar, the grapes are completely destemmed and racked to small stainless steel and concrete tanks. Our purpose is to have a slow and gentle infusion during alcoholic fermentation, to obtain a smooth wine without astringency. To do this, we carry out short pump-overs and taste daily until the extraction is optimal, adapting day by day to the sensation that the wine gives us in the mouth. Once the alcoholic fermentation is finished, half of the wine is placed in 500-liter fine-grained, lightly toasted French oak barrels and the other half in 225-liter barrels. with the same characteristics, where malolactic fermentation and aging will take place for 12 months.
El Valiente is a fruity wine but maintaining the essence of Bodegas Valdaya, with floral hints, such as violets, and balsamic notes. On the palate it is velvety, with round tannins and freshness. It maintains the classic elegant character in our wines and freshness, but opting for a more fruity and lively profile.
